Eggs are produced and sold by chickens. Yes, the chickens are anthro.
Milk is produced and sold by anthro female mammals like cows, goats, etc.
Meat is sourced from fish and other sea animals. Mostly catfish and tilapia from closed circuit vertical farms. Crabs, clams and other shellfish are also from closed circuit vertical farms.
Wild fisheries (save forage fish like menhaden, sardines, etc) are pretty much collapsed. They're not extinct but fishing has damaged their stock to such a degree that decades or even centuries will need to pass until they're restored.
Seals are raised for meat in the Arctic regions. They are used for meat and leather.
Meat from animals like pigs, sheep, cows, etc. is in-vitro grown using the same equipment and techniques that are used to grow replacement organs and skin for the various species in this 'verse. Many of these tissue culture facilities manufacture organs, skin and other tissues for scientific or medical purposes. It's illegal to culture tissue for consumption as well as advertise it as such, but the Lanthae PD have better things to do than bust a lab tech who sold a 3 oz pork chop to someone for 300 creds.
