One question: Are the new Paper Mario and Mario Kart games going to be remakes of the first Paper Mario and Mario Kart 64?
No. Star Fox is probably being remade to show that Nintendo hasn't completely forgotten about the series, and both it and Ocarina are also probably being remade because it's a quick, cheap way to sell the product to core gamers, right alongside Kid Icarus. Can't hurt the launch line-up either, can it? Can you imagine Ocarina, Star Fox, and Kid Icarus, all on day one? Yeah, that's probably what Nintendo's going for.
Metal Gear Solid, if it's a remake... I'm not sure why Kojima is going that route. Ditto for Kingdom Hearts.
That said, Nintendo's probably satisfied with OoT and SF64, so I don't imagine they'd need remakes beyond those two. Besides, Paper Mario isn't really the first title that comes to mid when I think of classic old games that would benefit greatly from a remake (it really took advantage of what the N64 had to offer) and most Mario Kart games include classic tracks from older games anyway. A remake would be rather redundant.
