The scenario I'd picture for grown-up stuff: Opening scene of the movie, with a grown-up one of the gang getting asked "Tell us about when you (some adventure)". Then back to normal for the rest of the movie.

They are not. There is no doubt that Littlefoot and the others did grow up. It is even said in the closing lines of the original movie. But we are not going to be told in a movie about their time as grownups.
The point of the fountain is that it would make a good device for a story. More practicable perhaps than the stone of cold fire. There are many ways to come up with such a story and either keep it mysterious, or find a good explanation for it. In any case one could come up with a plausible LBT story around this central theme. Ideas for elements and scenes in such a story keep popping up in my mind at the moment.

Yes A brief scene at the beginning of the gang as adults perhaps with thier children asking them for a story of thier youth. Cue flashback, story begins..

I'd go with generic Great Valley children. The gang's own children might be hard to do without canonising romantic pairings.

But what would be gained that way anyway? We know that the characters must have grown up. If the adventures continue with the characters of the same age (as I expect them to and as I'd prefer them to) what would be the point of that glimpse at the grownup versions of them? We've seen grownup members of their species before.

I for one wouldn't mind seeing the gang as adults would be an intresting idea....but now I that I think back to the end of the original movie the idea of the gang grown up telling their children of their own adventrues actually makes a little bit of sense...as the narrorator put it

'Generation after generation, each passing on to the next the story of their ansestors journey to the valley long ago...' I would also assume that would include the original gangs adventrues as kids....
