I put a ton of Christmas music on my Zen recently and had to decide what I would encode it to. I figured LAME -V5 --vbr-new would be good enough (around 130kbps avg depending on the music). I'll say this with some confidence--encoders these days are really REALLY good...unless I really focus hard, I'll never hear the difference between this and the original.

(hopefully Tim is still breathing and sitting upright because I'm surprised he'd hear me say that
